Yes, you can just use 2 trays at a time. We suggest putting a spare empty tray on the top shelf and then place the 2 trays evenly apart below. The empty top tray allows the air to circulate evenly rather than directly onto the next tray down

The dehydrator may be overloaded. Unplug and leave for 30 minutes for the motor to cool. Ensure food is spaced out on and add in additional trays (if spare) to increase air flow.
Best results are achieved when quality food is used which has been washed, dried, then cut uniformly (shredded, sliced or diced). Rotate the drying racks every 3-4 hours through the drying time. Ambient room temperature can also affect the drying times (humidity and air temperature).
